Kitchen and bathroom renovation

I'm planning a kitchen and bathroom renovation, but I have absolutely no idea where to start. Which work should I do first—removing old tiles or replacing plumbing fixtures? And does it make sense to hire one specialist for the entire project, or is it better to hire separate professionals for the bathroom and kitchen?
Has anyone done this kind of renovation before, and how did you organize it?

First, it's worth addressing all hidden utilities—pipes, electrical, plumbing—to avoid having to redo the tiling later. After that, the old finishes are removed and the surfaces are prepared.
